According to the Merriam-Webster Dictionary, a taco is "a Mexican food that consists of a folded and usually fried piece of thin bread (called a tortilla) that is filled with meat, cheese, lettuce, etc." Los Angeles is the epicenter of taco activity in the United States and therefore was the perfect location for Thrillist to host their first ever Taco Knockout. Celebrating Mexico's greatest street food, nine chefs demonstrated how tacos can come in many styles and flavors. They are so tasty that tacos are the Please The Palate pick of the week. From vegetarian to tuna to octopus to beef, lamb and pork, the assortment of tacos was as diverse as some of Southern California's chefs whipped up their inventive spins on the classic taco. It’s been 4 years since Rick Bayless, the Chicago-based American chef who specializes in traditional Mexican cuisine with modern interpretations, opened his restaurant Red O on Melrose Avenue in LA. Since then he has opened a second location in Newport Beach, making two locations where you can experience sophisticated Mexican cuisine. While the menu is seasonal and changes regularly, for their 4 year anniversary, most of the menu was redone. Overseen by Executive Corporate Chef Keith Stich, and in conjunction with Rick Bayless, this is the first major change in 4 years so we went in to check it out! The cocktails have been updated as well by Director of Wine and Spirits Dan OIiver so we began with cocktails, of course!
Chef Rick Bayless newest book Frontera: Margaritas, Guacamole, Snacks is a collection of recipes of his prized margaritas, guacamole and snacks. I got a sneak preview when Rick Bayless hosted a cooking demo and book signing at his Red O Restaurant in Los Angeles and have since had fun trying recipes at home.
