SEMINARS:
11:00am – 12:00pm Pairing Madeira Wine with Food
From dry to sweet, Madeira is a wine with intense freshness as a result of its typical acidity. It has a bouquet consisting of a set of aromas that develop during the aging process, resulting in complex, rich, intense, and unforgettable wines. Madeira can be paired with many types of foods, you just have to dare yourself! Led by Sommelier and Wines of Portugal brand ambassador Eugénio Jardim, taste five styles of Madeira paired with different bites and discover the exciting versatility of Madeira.
1:00pm – 2:00pm Madeira and Cocktails
While often served as an aperitif or a dessert, Madeira wines are a perfect modifying ingredient in cocktails. Join Camron Robertson, General Manager of Thunderbolt LA, who will demonstrate how Madeira’s well-rounded flavor profile, and balanced level of sweetness and acidity, can enhance a range of cocktails.
3:00pm – 4:00pm Aged Madeira
Madeira wine has a particular aging process where temperature and slow oxidation promote the appearance of distinctive characteristics of intense and complex aromas, making this wine unique in the world. Its longevity is tremendous, with examples of wines more than 300 years old in the bottle that maintain their qualities practically unaltered. It is a wine with an unparalleled evolutionary capacity! While we will not have any 100-year-old Madeira in this seminar, we will have selections ranging from 25-35 years old.
